Fatigue
It is no fun to be tired. But for almost everyone fatigue is a fact of life. Try these fatigue healing herbs below they’ll refresh you and help you see a bigger picture. If fatigue persists, it may be a sign of depression, anemia, thyroid disease, or chronic fatigue syndrome, and you should see a doctor for a diagnosis

ASTRAGALUS STOCK
Astragalus enhances the immune system and builds energy. I’d like to say,
“for fatigue this is one of my favorite ways to use astragalus.”
You can make homemade chicken stock, adding astragalus to the pot, or here’s a quick version:
Makes 4 cups
WHAT YOU’LL NEED:
- ¼ cup chopped astragalus root
- 4 cups chicken broth
WHAT YOU’LL DO:
1. Put the root and chicken broth in a large pot.
2. Cover and gently simmer for 1 hour.
3. Use this stock when cooking rice or couscous or to flavor soups (such as the immune soup recipe below).
ASTRAGALUS IMMUNE SOUP
Astragalus immune soup also helps fight fatigue
4 servings
WHAT YOU’LL NEED:
1 tablespoon olive oil
½ large onion chopped
½ cup chopped celery
½ cup chopped sweet potato
8 fresh shiitake mushrooms,
sliced 4 garlic cloves,
minced 4 cups Astragalus Stock
1 teaspoon thyme
1 teaspoon rosemary
½ teaspoon crushed red pepper
¼ teaspoon sea salt
1 cup chickpeas 1 cup fresh baby kale leaves
WHAT YOU’LL DO:
1. In a large pot over medium-high heat, heat the olive oil and sauté the onion, celery, and sweet potatoes for about 5 minutes. Add the mushrooms and garlic, then cook 3–4 minutes longer.
2. Stir in the Astragalus Stock, thyme, rosemary, red pepper, sea salt, and chickpeas.
3. Bring the soup to a boil, then turn the heat to low, and simmer for about 20 minutes.
4. Add the kale and cover the pan, continuing to simmer it for another 5 minutes.
ALTERNATIVE: Add 1 cup of firm tofu or shredded chicken breast for a protein boost.
CRISPY BURDOCK FRIES
Burdock has been long revered as an energizing herb. It’s got potential to reduce fatigue and improve physical performance.

WHAT YOU’LL NEED:
5 burdock roots, well cleaned and cut (see note below) 2 tablespoons sunflower oil ¼ teaspoon paprika ½–1 teaspoon thyme, to taste Dash of soy sauce or tamari Salt and pepper
WHAT YOU’LL DO:
1. Preheat the oven to 450°F.
2. Slice the roots into ¼ inch thick strips. Place them in a plastic bag. Add the oil, paprika, thyme, and tamari. Seal and shake until all the pieces are coated.
3. Spread evenly on a baking sheet and bake for 20–30 minutes, turning occasionally until all sides are brown.
NOTE: Burdock roots differ greatly in size, particularly if wild-harvested, so adjust the number of roots used accordingly.
